Cheddar and Onion Mini-Muffins

Ingredients

-1 1/2 cups all-purpose flour 375 mL
-1 tsp baking powder 5 mL
-1 tsp baking soda 5 mL
-1/4 tsp salt 1 mL
-1 cup grated Balderson Heritage 5 Year Old Cheddar Cheese 250 mL
-1/3 cup granulated sugar 75 mL
-1/2 cup Beatrice milk 125 mL
-3 tbsp melted Lactantia butter 45 mL
-1/3 cup finely chopped green onion 75 mL


Cooking Instructions

1. Preheat oven to 400°F (200°C) and grease 18 mini muffin cups.

2. Combine flour, baking powder, baking soda, salt and grated Balderson Heritage 5 Year Old Cheddar Cheese in a bowl. Make a well in the centre. Combine remaining ingredients. Add to dry ingredients and gently fold together until just mixed and somewhat lumpy. Spoon batter into greased muffin cups. Bake 10 to 12 minutes or until golden.
