Mexican Salad


1 large tub of field greens salad mix
6 green onions, sliced
1 yellow pepper, diced into small pieces
1 red pepper, diced into small pieces
2 avocados, diced into small pieces
2 ripe mangoes, diced into small pieces
1 box cherry tomatoes, cut in half
150g Feta cheese
Handful cilantro, chopped
Optional add other fruits to liking
N cup of Rockwell’s Premium Liquid coconut oil
Juice of 1 lime
Top or toss in Rockwell’s Organic Toasted Coconut Chips
Salt and pepper to taste

Cooking Instructions

1. The key to this salad is to slice and chop your veggies fairly small. About 1.5cm squared. Start with putting your field greens in a large salad bowl.

2. Add all other ingredients.

3. Mix together the oil, juice and add a good pinch of salt and pepper. Pour over and give a good toss.
