Spinach Dip


1 x 300g bag Cookin’ Greens Organic Spinach, thawed and drained
2 Tbsp unsalted butter
1 medium shallot, finely diced
½ tsp paprika
1 x 225g package cream cheese
½ cup cream
¼ cup sour cream
½ teaspoon sea salt
¼ teaspoon fresh ground pepper

Cooking Instructions

Squeeze liquid out of spinach with paper towel. In a medium pan over medium heat, melt the butter and lightly sauté the shallot until soft and translucent, 3 minutes add the paprika and cook for a further 30 seconds.

Add spinach and cream cheese and cook stirring until cheese has softened, add the cream, sour cream, salt and pepper, stir and cook for 10 minutes.

Dip should be nicely warmed through and thickened slightly. Serve with pita chips or crackers.

If not serving immediately, chill and store in an air tight container, warm before serving, best used in 24 hours.
