Wilmot Orchards’ Blueberry Mousse

From Wilmot Orchards in Clarington, try this blueberry mousse that goes great on cupcakes, in cream puffs or on its own as a chilled summer dessert!


-3 cups blueberries
-2/3 cup granulated sugar
-2 tbsp. unflavoured gelatine
-1/2 cup boiling water
-2 cups whipping cream

Cooking Instructions

Fresh Herb Raita:
1. In a blender or food processor purée blueberries until smooth.

2. In a heavy saucepan, place blueberry purée and sugar. Dissolve gelatine in boiling water. Add to berry mixture. Bring blueberry mixture to a boil. Remove from heat and allow to cool.

3. Refrigerate mixture until partially thickened. Whip cream until stiff peaks form and fold into blueberry mixture.
