Coconut Oatmeal Cookies

Oat Waffles


1/2 cup shortening
1 cup brown sugar
1 cup white sugar
2 eggs
1 tsp vanilla extract
1/2 cup butter
2 cups all-purpose flour
1 cup flaked coconut
1 tsp baking powder
1 tsp baking soda
2 cups rolled oats

Cooking Instructions

1. In a medium mixing bowl, combine shortening with butter and both sugars. Add eggs and vanilla, and set aside. Preheat oven to 350 degrees.

2. In a separate bowl, combine flour with baking powder, baking soda, and rolled oats. Once they’re all blended, add in the coconut.

3. Combine wet and dry ingredients and form cookies on a greased cookie sheet. Bake for 8-10 minutes.
